Joly Life Juicing Recipe!

Wakeup Juice!
4 Large Carrots
1 large stalk of Celery with leaves still on
Optional 1-green apple

This juice wakes you up really fast and if you are not much for veggie juices alone the green apple cuts thru and gives it a mild and natural sweetness.  Very yummy and has beta carotene, vitamin A, B complex, D, E, K, C, Iron, Calcium, sodium, potassium, magnesium and maganese, 

YUM!

You can also save the pulp and turn them into a veggie or fruit sauce...(think applesauce consistancy) or you can use the pulp in your garden as fertilizer.

The Joly Life Pho Recipe!

So my friend Amber from #amberismz brought to my attention a gluten free and delicious noodle dish called Pho. Its pronounced Fuh.  I had my first taste of it at a resturant here in Tulsa called Pho Nhi.  Let me tell you that the bowls are huge. But i had to know how to make this and so I did my research and made my own and it was a complete success. So now I will share my dish with you as I was asked.  The best broth is made using oxtail, and knuckle bones. You cook it for at least 6 hours to get the flavor from the bones. You want to skim any fat off the surface after the initial cooking.  You want to have access to the following spices. Spice pack ones are marked SP.


  1. Star Anise (2 pods) (SP)
  2. Cinnamon (1 stick) (SP)
  3. Green Onions (1 TBSP chopped)
  4. Cardamom (1 pod) (SP)
  5. Coriander (1 TBSP) (SP)
  6. Fresh Ginger (5 good sized slices) (SP) or can be left loose and take out later.
  7. Salt (1 tsp)
  8. Pepper (1 tsp)
  9. Cilantro (1/2 cup)
  10. Fennel (1 1/2 TBSP) (SP)
  11. Thai Basil (One large bunch) (not for the broth cooking but afterwards)
  12. Mint - (Again optional for after Pho is served)
  13. Cloves (3 whole cloves) (SP)
These ingredients do not stay in the broth the entire time so it is best if you have a leaf tea steeper or you can use cheesecloth or even a coffee filter to hold the dried spices in a packet to get the flavor during the broth cooking.

You will also need other ingredients

  1. 3-6 lbs beef bones
  2. 1-2 lbs oxtail
  3. 1-2 onions cut in half UNpeeled
  4. 4 quarts of water
  5. 2 1/2 TBSP fish sauce
  6. 1 1/5 Cups Bean sprouts (We like mung bean ones)
  7. 1-2 limes cut into wedges
  8. Optional Hoisin Sauce
  9. Optional Sriracha Sauce
  10. 1 pk 8 oz Rice Vermicelli or Mei Fun Noodles.
  11. 1 lb thin sliced beef of your choosing (optional)
  12. Fish Balls (optional)
  13. Shrimp (optional)
Ok so here we go. This disk does take a bit of preparation before the actual combination of things to make the broth but let me tell you the wait is totally worth it. So lets begin.

PREP:

Cut onions in half. Do not peel.  Place onions ginger, and the beef bones in an oven at 425 Degrees F.
The beef needs to remain in the oven for at least an hour til browned. The onions and ginger only take about 45 mins. You want the ginger golden and onions blackened so keep an eye on them.

Once the beef and ginger and onions are ready, you can begin the broth.

Cooking and straining.

In a 5 qt or larger pot put the 4 quarts of water on. Add your bones, oxtail, onions and your spice pack. add the salt and pepper as well. Add the fish sauce also. See above they are marked.  Boil for 6 - 10 hours. I have heard that at 6 hours you have the most flavor from the bones but you might want more from the spice packet. Taste and see what you desire.

Once broth has finished you can use a fine strainer to pull any fat or grey bits (called scum) from the top. It is from the fatty parts of the bones and oxtail.  The clearer the broth the better the flavor in the end. Discard the spice pack, and you can also discard the bones and oxtail.  My dogs usually get the bones.

Once your broth is ready you need to get things rolling.  Add your rice vermicelli. add the cilantro and green onions into the broth.  Set a dish for each place setting or make a middle dish with the thai basil, lime wedges, and lots of bean sprouts, mint and you can add other types of herbs as well. Some have added parsley, cilantro, or thyme also to give a nice fresh bite of flavor to the dish.  The noodles generally cook in under a minute. At this time you can add the thin sliced beef to the broth and it will cook the meat very fast. Serve immediately and enjoy. Add herbs, beans, or either sauce of your choosing to spice it up a bit.  You can also get fish balls to cook with this as well as a option. Some also add shrimp into the dish. All these generally are added at the very end right before serving.

This amount easily serves my family of 5 and sometimes up to 7.  The broth is very hearty. 
In the picture below we used the recipe above but added sugar snap peas, brocolli and white onions to the broth before serving. My kids are huge fans of these. You can always add your own items to the dish. Enjoy!

Hersheys Kisses is helping you celebrate Christmas this year with Kisses!


Who doesn't love a little sweetness in your life?  Thanks to Influenster and Hershey's I recieved a cute little box of Christmas Hershey Chocolates.

My husband loved it so much he ATE them all before I could get a proper picture of them inside the cute little box.  So it was #MerryKissmas for him.  I love how Hersheys Kisses can be used in so many ways.

Personally I like making candy with them. I found several cute recipes on Pinterest and on Hersheys website for making creative candies with them.  I also have made cookies with them too.

Pink Lemonade Cookies Recipe

I made some cookies for my church's Christmas Cookie Annual Sale.

We made several kinds.

So since I have been asked to share my recipes, I will. This one is for the Pink lemonade cookies.

Pink Lemonade Cookies


Prep Oven to 350 Degrees F



  • 1/2 C Butter
  • 1/2 C Granulated Sugar
  • 1/4 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1 Egg
  • 1/3 C Pink Lemonade Concentrate Thawed
  • 2 TBS Butter or Margarine Softened
  • 2 C Powdered Sugar
  • 2 tsps Pink Lemondate Concentrate Thawed
  • Water

For the Cookies -



Directions
Beat 1/2 cup butter in a mixing bowl with an electric mixer for 30 seconds. Add granulated sugar, baking powder, and baking soda; beat until combined. Beat in egg and 1/3 cup lemonade concentrate. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour with a wooden spoon.
Drop by rounded teaspoons 2 inches apart on an ungreased cookie sheet. Bake in a 350 degree F oven for 10 to 12 minutes or until edges are golden. Cool on cookie sheets for 1 minute; transfer cookies to wire racks and cool completely.   These cookies will be soft and lightly brown on edges.
You can make these with or without frosting. You can also make these into cookie sandwhiches.  Very delicate and pack a lot of flavor. :)

For the Frosting - 

Beat together 2 tablespoons butter, powdered sugar, and 2 teaspoons lemonade concentrate and enough water (3 to 4 teaspoons) to make of spreading consistency. If desired, add red food coloring to tint the frosting a delicate pink. Frost cookies. Makes 36.

Ez 4 Ingredient Fudge By Tiffany

EZ 4 Ingredient Fudge

If you like to make candy and have for years struggled with fudge becasue of the soft balling stage being hit or miss......this is the post for you!

This 4 ingredient fudge is so easy you will hit your head in wonder why no one has done this before.

So onto the recipe folks.

You need 3 cups of chocolate chips (any flavor you want)

1 tsp salt

1 14oz can sweetened condensed milk

1 TBSP  vanilla extract

Prep a 9x9 dish with tinfoil and lightly spray with cooking spray.

In a microwave safe bowl combine ingredients and pop in the microwave at the start for 3 mins.
Take out and stir and see if it is smooth. THIS IS THE HARDEST PART!!!!  
If not use another minute to 2 minutes until the mixture is smooth once it is smooth keep mixing and it will begin to set up.  You can at this time if you desire add marshmallow cream if you like yours this way, or peanut butter while the chocolate is still hot. 

Once it is all incorporated pour mix into the prepared 9x9 dish and tap on table lightly to even out the top and remove any air bubbles.



Place in refridgerator for at least 2 hours or until fudge is set.

Flip the dish and peel off tinfoil and cut into your desired shapes to serve.

Voila. Easy!!!

I use Almond Bark bars of chocolate to melt but you can use what you like. I did Vanilla and Milk Chocolate Cherries. 

Things you need

Almond Bark or other chocolate to melt
Candy mold of your choice (I am using a mold for making filled candies)

Heat the chocolate til it is nice and melted in a microwave safe container.  Usually 1-3 minutes.

Fill your mold about 1/2 way in each space.

Place drained marachino cherry in each mold and gently press down but not all the way to the bottom.

Fill the other half of the mold with your chocolate mix

Tap tray til bubbles and chocolate is flat.

Stick in freezer to set chocolate it only takes about 5 mins or so to set them enough to pop them out so you can make more.  

Pop first batch out and keep in fridge to finish setting.

Continue til you are done and the end result is this.

You can also mix this with beauty treatments to clear skin problems.  There is an awesome recipe for a hair mask I am dying to try on my husband as he has cronic dry scalp and it has been a medical problem. Since Tea tree works like an an antiseptic, this would be great to try with his hair and see how his scalp comes about after a few treatments. The book alone makes your life so easy as the recipes are there to help you along the way to starting your essential oil experience.

Green Tea Matcha Powder by KissME Review

KissME recently gave me an opprotunity to try out thier Green Tea Matcha. I absolutly love this product!  It gives great energy that really wakes you up and lasts for hours and slowly recedes back in a way that doesnt crash you.  It can be added to smoothies, or lattes, I even add it to coffee, and you can add it to baked goods for a boost when you want one.  You can find it matcha green tea powder here and purchase it as well.  They also included a great ebook recipie guide to give lots of ideas on how to use it.

I have found my favorite mix is this  *Tiffs Green Blend*

1/2 banana
1/2cup milk
1 TBS peanut butter
3 Ice Cubes
1/2 tsp Green Tea Matcha.

I blend in a bullet blender until well mixed and creamy.  Its very delish and you wont want to miss out.

Stephanies Homemade Crockpot BBQ Ribs!

3-4 lbs of pork ribs (we like pork cause there is no meat on beef ones!)

! bottle of BBQ Sauce of your choosing (We like Sugar Ray's)
I add garlic powder and pepper to taste!

Cook on high for 4-6 hours or until ribs are to your desired tenderness! I like mine falling apart!


Serve with either rice/quinoa 


This time we had homemade potato salad with it!! Yummmmy!

Homemade Curry and Rice - Tiffany Joly's Homemade recipie

Oh I know everyone loves food and recipies.  And I love to make things from scratch.  Since I have a picky husband, I decided to try something one night to see if he would eat it LOL... I love curry. Some of my favorite to make is Deer Curry but unless I get ahold of hunter friends during deer season its hard to come by.  You can make this curry with any kind of meat honestly, chicken, lamb, roast, steak, pork. Really the meat isnt important.  I love using fresh veggies also. So you ready for how I do this?  Ok here it goes.







First of all you will want these ingredients on hand...

Some kind of meat (if you want meat in it)  Amount is really up to you.  I use cubed or sometimes just 2-3 steaks and cut them up when raw and add to the pot so it gets incorporated into the finished dish

Potatoes -  5-6 good sized ones chunked.  You dont want them too small or they will cook too fast. I use 1x1 chunks approx when i cut them up.

Carrots - 5-7 long and thick ones  Just slice them thick also  (they add a touch of sweetness to the spicy curry)

Onions - 2 small yellow onions sliced or chopped.

Garlic - 2 cloves fresh, or about 2 TBS of prechopped garlic, or powder (fresh is best)

Curry - (your choice)  I use a yellow curry that has a good spice but its not overly hot.  I add more as needed for taste.

ADOBO - If you are not familiar with this spice it is made by Goya and has many spices together. I use the salt free kind.  Its great because it tenderizes meat has no MSG and includes seasonings I would already be using like onion powder, garlic powder, pepper and the link in a nice blend. (again its to taste)


Get a 5 quart pot and put your chopped potatoes, onions, carrots and meat in the pot.  Add only enough water to cover the ingredients, add your curry and adobo and garlic. Let this cook on high for about 15 mins until the meat is cooked then taste your curry...add additional seasonings if you like. Its up to you how spicey you want it so start with small amounts.  (1-2 tsp per spice)  Increase as you see fit, remember Potatoes will absorb spices, salts and the like so make sure you check your taste on it as you cook it.  As it boils you will see it reducing, the potatoes will take on a yellow look and so will the meat. that is perfectly OK!    After about 30-40 mins it should thicken on its own (potatoes own starch causes thickening of the curry)  If you have excess water and its not thickening you can take some of the hot broth and about 3 tbs cornstarch and mix well to make a thickener and add back to the pot and stir in.  This will cook about 5-6 mins and start to thicken up pretty fast.

Once you get a nice thick sauce, and potatoes are cooked thru then you are ready to eat.  I add butter in the kids bowls at the end to cut the spice back and give it a creamy flavor they love.

I generally make herbed rice to go along with this.

2 Cups Rice
4 Cups Water
2 bunches fresh rosemary
2 bunches fresh thyme
1 clove garlic
2 Tbs butter
1 tsp salt


Boil rice for at least 10 minutes until soft stirring often until it looks cooked mostly thru, reduce to low heat and keep covered for another 2 mins.  Check rice once its not hard, turn off stove and keep covered and let it absorb the rest of the water then fluff.  Very simple and easy and goes great with Curry!

Gluten Free- Guilt Free Banana-Choc-chip and walnut oatmeal cookies





So why are these cookies so dang good?  Why are they guilt free?  Oh and tastey, yes they really are!!!

Can't be true can it?  Well these cookies have NO flour, sugar, or salt, or butter in them, and yet dissapear just as fast as if they did.    So want the scoop?  OK I will give you my recipie but make sure you link back to me please :)  Thank you ever so much!!!!!

Tiff Joly's Easy Gluten Free- Guilt Free Banana-Choc-chip and walnut oatmeal cookies

What you need :

Several Overripe Bananas ( I used an entire bunch cause I make lots and keep them for later)
Instant Quick Oats (any brand works)
Chocolate Chips (one bag for a huge batch, half bag for smaller batches)
Walnuts - or any other nut for adding to cookies.
2 Eggs - (optional)
1 tsp vanilla

Preheat Oven to 350 F

The Measurements dont have to be exact either.  One cup bananas to about 1/2Cup Oats.
  So you can really play around with this recipie and add things to it.  Remember bananas act as your wet ingredients so you want to mash them really well, add oats and vanilla (eggs also if you add them go in now) till you get a sticky and what looks a bit dry oat/banana batter. Let sit a few moments.

One cup bananas to about 1/2Cup Oats.

Once the batter has rested and gets the wet texture to it you can add in your chocolate chips, or nuts and any other items you want in your cookies.  If the batter seems more dry after adding extras, you can add eggs as a binder. You dont have to have them in there. You could easily add an extra banana as well.  I add eggs to help keep the form on the cookies.  Pure preference :)

Another note - if you are used to making oatmeal cowboy cookies and how they expand, this recipie does NOT do this. So if you want thinner cookies use a fork like in peanut butter cookies to form them a lil better, or you can make them into balls and they hold thier shape too (this is great if you like doing chocolate coated cookie balls)

They take about 10-15 mins to cook, just keep an eye on them once they get a light brown color they are done.  Let them cool and they are a chewy soft cookie that tastes very similar to banana bread with chocolate.

Enjoy your guilt free cookies.  Just as with any sweets don't go overboard and enjoy them but who can resist LOL.  If you need any help with this recipie just comment below.
